This easy baked chicken recipe uses mayonnaise and Parmesan cheese to create a juicy, tender chicken breast with a golden-brown topping. It’s a perfect weeknight meal that requires minimal effort.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix together the mayonnaise, grated Parmesan cheese, garlic powder, onion powder, and black pepper until well combined.
  4. Spread the mayonnaise-Parmesan mixture evenly over the top of each chicken breast.
  5. Place the chicken breasts in a baking dish.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The topping should be golden brown and bubbly.
  7. Let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.

  • For a creamier topping, you can use full-fat mayonnaise.
  • If you don’t have mayonnaise, you can substitute it with plain Greek yogurt for a lighter option. Ensure the Greek yogurt is thick and not watery.
