1 pound smoked kielbasa sausage, sliced into half-moons
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces dried pasta (penne or rotini work well)
4 ounces cream cheese, cut into cubes
1/2 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Instructions
Place a large pot or Dutch oven over medium-high heat. Add the olive oil.
Add the sliced kielbasa to the pot and cook until lightly browned on both sides, about 4 to 5 minutes. Remove the sausage with a slotted spoon and set aside, leaving any rendered fat in the pot.
Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the diced tomatoes (with their juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Add the dry pasta to the boiling liquid. Stir well to prevent sticking. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender.
Stir in the cubed cream cheese until it melts and creates a creamy sauce base.
Stir in the heavy cream and the cooked kielbasa. Continue to cook, uncovered, for 2 to 3 minutes until the sauce thickens slightly and the sausage is heated through.
Remove the pot from the heat. Stir in the mozzarella cheese and Parmesan cheese until fully melted and incorporated.
Serve immediately. This is a great example of easy one pot meals.
Notes
For a slight kick, add 1/4 teaspoon of red pepper flakes with the Italian seasoning.
You can substitute the heavy cream with an equal amount of half-and-half for a slightly lighter sauce, though the texture will be less rich.
If the sauce seems too thick after resting, add a splash of milk or broth to reach your desired consistency.
