1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
1 cup boiling water
1 cup chopped pecans, plus extra for topping
1 cup packed light brown sugar
1/2 cup light corn syrup (or maple syrup for an alternative)
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
Prepare the topping: In a medium bowl, whisk together the flour, granulated sugar, and baking powder. Cut in the cold butter pieces using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set this topping aside.
Prepare the filling: In a separate bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth. Stir in the 1 cup of chopped pecans.
Assemble the cobbler: Sprinkle the flour mixture evenly over the bottom of the prepared baking dish. Do not press it down.
Pour the pecan filling mixture evenly over the flour layer. The filling will sink below the topping mixture.
Sprinkle the extra chopped pecans over the top.
Carefully pour 1 cup of boiling water over the entire surface of the batter. Do not stir.
Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbly and set. The gooey caramel sauce will form beneath the crust.
Let the pecan pie cobbler cool slightly before serving warm, perhaps with vanilla ice cream.
