Create flavorful homemade fried noodles fast. This simple soy sauce noodles recipe delivers satisfying Asian-inspired dinner results in under 15 minutes, perfect for any weeknight meal.

  • 8 ounces dried egg noodles or ramen noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup shredded cabbage
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 4 ounces protein (sliced pork, chicken, or firm tofu), optional
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian stir-fry sauce)
  • 1 teaspoon sesame oil
  • 1 green onion, sliced, for garnish
  • 1 teaspoon toasted sesame seeds, for garnish

Instructions

  1. Cook the noodles according to package directions until just tender. Drain them well and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook for 30 seconds until fragrant.
  3. If using protein, add it now and stir-fry until cooked through, about 3 to 4 minutes.
  4. Add the cabbage, carrots, and mushrooms to the skillet. Stir-fry for 3 to 4 minutes until the vegetables are crisp-tender.
  5. Add the cooked and drained noodles to the skillet.
  6. In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Pour the sauce mixture over the noodles and vegetables.
  7. Toss everything together quickly for 1 to 2 minutes until the noodles are evenly coated and heated through.
  8. Remove from heat. Serve immediately, garnished with sliced green onion and toasted sesame seeds.

Notes

  • For a vegetarian version, skip the meat and use vegetarian stir-fry sauce in place of oyster sauce.
  • You can substitute the vegetables with whatever you have, like bell peppers or bean sprouts, for a quick vegetable fried noodles dish.
  • To get those slightly crispy edges characteristic of good pan fried noodles, let the noodles sit undisturbed in the hot pan for about 30 seconds before tossing.
