Create these easy Sausage McGriddle Bites at home to capture the famous sweet and savory flavor profile in a perfect, bite-sized snack or quick breakfast.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk
  • 2 tablespoons melted butter, plus more for griddle
  • 1/4 cup pure maple syrup, divided
  • 1/2 pound breakfast sausage (pork or turkey), cooked and crumbled
  • Cooking spray or oil

Instructions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt for the pancake batter.
  2. In a separate small bowl, whisk the egg, milk, and melted butter. Add the wet ingredients to the dry ingredients and mix until just combined; do not overmix.
  3. Stir in half of the maple syrup (2 tablespoons) into the batter. This creates the sweet pockets.
  4. Lightly grease a non-stick griddle or large skillet and heat over medium heat.
  5. Pour small circles of batter onto the hot griddle, about 2 inches wide, to form the bites.
  6. Immediately sprinkle a small amount of the cooked, crumbled sausage onto the top of each batter circle.
  7. Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set.
  8. Flip the bites and cook for another 1 to 2 minutes until golden brown and cooked through.
  9. Remove the bites from the griddle and place them on a wire rack.
  10. While the bites are warm, lightly brush the tops with the remaining 2 tablespoons of maple syrup for a glaze.
  11. Serve immediately as a quick sausage breakfast or appetizer.

Notes

  • For the best texture, use real maple syrup, not pancake syrup.
  • You can prepare the sausage ahead of time to speed up the assembly process for these easy sausage griddle bites.
  • If you want a slightly crispier exterior, use a little more butter or oil on the griddle when cooking.
  • These miniature McGriddles freeze well; cool completely, then store in an airtight container between layers of parchment paper. Reheat in a toaster oven.
