1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
3/4 cup milk
2 tablespoons melted butter, plus more for griddle
1/4 cup pure maple syrup, divided
1/2 pound breakfast sausage (pork or turkey), cooked and crumbled

Instructions
In a medium bowl, whisk together the flour, sugar, baking powder, and salt for the pancake batter.
In a separate small bowl, whisk the egg, milk, and melted butter. Add the wet ingredients to the dry ingredients and mix until just combined; do not overmix.
Stir in half of the maple syrup (2 tablespoons) into the batter. This creates the sweet pockets.
Lightly grease a non-stick griddle or large skillet and heat over medium heat.
Pour small circles of batter onto the hot griddle, about 2 inches wide, to form the bites.
Immediately sprinkle a small amount of the cooked, crumbled sausage onto the top of each batter circle.
Cook for 2 to 3 minutes until bubbles form on the surface and the edges look set.
Flip the bites and cook for another 1 to 2 minutes until golden brown and cooked through.
Remove the bites from the griddle and place them on a wire rack.
While the bites are warm, lightly brush the tops with the remaining 2 tablespoons of maple syrup for a glaze.
Serve immediately as a quick sausage breakfast or appetizer.
Notes
For the best texture, use real maple syrup, not pancake syrup.
You can prepare the sausage ahead of time to speed up the assembly process for these easy sausage griddle bites.
