Make this easy Snickerdoodle Cobbler for a warm, gooey dessert tasting just like your favorite cinnamon-sugar cookies. It is simple to prepare and perfect served warm with vanilla ice cream.

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup light brown sugar, packed (for cinnamon swirl)
  • 2 tablespoons ground cinnamon (for cinnamon swirl)
  • 1/2 cup boiling water (for topping)
  • 1/2 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until just combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing on low speed until you form a simple batter. Do not overmix.
  6. In a small bowl, mix the 1/4 cup brown sugar and 2 tablespoons of cinnamon for the swirl.
  7. Spread half of the batter evenly into the prepared baking pan. Sprinkle the cinnamon-sugar swirl mixture over this layer.
  8. Gently spread the remaining batter over the cinnamon layer. Do not worry about covering it completely.
  9. In another small bowl, mix the 1/2 cup granulated sugar and 1 teaspoon cinnamon for the topping. Sprinkle this mixture evenly over the top of the batter.
  10. Carefully pour the 1/2 cup of boiling water over the entire surface of the cobbler. This helps create the gooey texture.
  11. Bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted near the center comes out mostly clean.
  12. Let the cobbler cool slightly before serving warm with a scoop of vanilla ice cream.

Notes

  • For a richer flavor, use cream cheese instead of half the butter in the batter.
  • You can substitute apple pie filling for the boiling water layer if you want a fruitier cobbler base.
  • This dessert tastes best when served warm, straight from the oven.
