1 box (15.25 ounces) strawberry cake mix
2 large eggs
1/2 cup vegetable oil
1 cup white chocolate chips
1/2 cup powdered sugar for dusting (optional)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, combine the entire box of strawberry cake mix, the two eggs, and the vegetable oil. Mix with a spoon or electric mixer until the dough comes together. Do not overmix.
Fold in the white chocolate chips gently.
Press the dough evenly into the prepared baking pan.
Bake for 20 to 24 minutes, or until the edges are lightly golden and a toothpick inserted near the center comes out with moist crumbs attached.
Remove the pan from the oven and let the bars cool completely in the pan on a wire rack.
Once cool, lift the bars out using the parchment paper overhang. Cut into squares. Dust with powdered sugar before serving, if desired.
Notes
For a slightly denser bar, sometimes called a strawberry cake mix blondie, reduce the oil by 2 tablespoons.
If you want a cream cheese swirl, mix 4 ounces of softened cream cheese with 1/4 cup of sugar and dollop over the batter before baking, then swirl with a knife.
For a chewier texture, slightly underbake by 1-2 minutes.
