1 box (15.25 oz) strawberry cake mix
2 large eggs
1/2 cup vegetable oil
1 cup powdered sugar, for rolling
1 cup cream cheese frosting (store-bought or homemade)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the entire box of strawberry cake mix, eggs, and vegetable oil. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
Place the powdered sugar in a shallow dish.
Scoop the dough into rounded tablespoons. Roll each dough ball completely in the powdered sugar until coated.
Place the coated dough balls about 2 inches apart on the prepared baking sheets.
Bake for 8 to 10 minutes, or until the edges are set. The cookies will look slightly puffy.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, spread a generous layer of cream cheese frosting onto the flat side of one cookie. Top with a second cookie to form a sandwich.
Repeat with the remaining cookies and filling.
Notes
For a richer flavor, you can substitute the vegetable oil with melted unsalted butter.
If you prefer a slightly firmer cookie, bake for an extra minute or two, watching carefully to prevent burning.
You can make your own strawberry frosting by beating 1/2 cup softened cream cheese, 1/4 cup softened butter, 2 cups powdered sugar, and 1 teaspoon strawberry extract until smooth.
