1 pound ground turkey
1 medium onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
1 red bell pepper, chopped
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese (optional topping)
Instructions
Heat the olive oil in a large (10 or 12-inch) skillet over medium-high heat.
Add the ground turkey to the skillet. Break the meat apart with a spoon and cook until browned, about 5 to 7 minutes. Drain off any excess grease.
Add the chopped onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
Add the diced sweet potatoes, chopped red bell pepper, chili powder, cumin, oregano, salt, and pepper to the skillet. Stir well to coat everything with the spices.
Pour in the undrained diced tomatoes with green chilies. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover the skillet, and cook for 10 to 12 minutes, stirring halfway through, until the sweet potatoes are tender when pierced with a fork.
Stir in the rinsed black beans. Cook uncovered for 2 to 3 minutes until the beans are heated through.
Remove the skillet from the heat. If using, sprinkle the shredded cheddar cheese over the top and cover for 1 minute until the cheese melts slightly.
Serve immediately directly from the skillet.
Notes
For a faster cook time on the sweet potatoes, dice them smaller, about 1/4-inch pieces.
You can substitute ground beef or ground chicken for the turkey in this one pan sweet potato meal.
