2 large sweet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15-ounce) can black beans, rinsed and drained
1 cup frozen or fresh corn kernels
1 cup cooked brown rice or quinoa (for base)
1 avocado, sliced or diced
1/2 cup salsa (your favorite kind)
1/4 cup chopped fresh cilantro
Optional Topping: 1/4 cup Greek yogurt or sour cream
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a medium bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast for 20 to 25 minutes, flipping halfway through, until they are tender and slightly caramelized.
While the potatoes roast, combine the rinsed black beans and corn in a small saucepan. Heat over medium heat for about 5 minutes until warmed through. Season lightly with a pinch of salt if desired.
To assemble your bowl, place a serving of cooked rice or quinoa in the bottom of each bowl.
Top the base evenly with the roasted sweet potatoes, the warm black bean and corn mixture, sliced avocado, and salsa.
Sprinkle with fresh cilantro and add a dollop of Greek yogurt or sour cream, if using. Serve immediately for a comforting dinner.
