  • 12 cups Chex cereal (mix of rice and corn)
  • 1 cup pretzel twists
  • 1 cup pecan halves
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips (optional mix-in)

Instructions

  1. Preheat your oven to 250 degrees F. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and pecans. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the butter melts and the mixture comes to a full rolling boil. Boil without stirring for exactly one minute.
  4. Remove the saucepan from the heat immediately. Stir in the vanilla extract, baking soda, and salt. The mixture will foam up.
  5. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently fold everything together using a large spatula until the cereal is completely coated. Work quickly.
  6. Spread the coated mix in a single layer onto the prepared baking sheets.
  7. Bake for 45 minutes, stirring the mix every 15 minutes to prevent burning and promote even crisping.
  8. Remove from the oven. If using chocolate chips, immediately sprinkle them over the hot mix. Let the mix cool completely on the baking sheets until the toffee hardens and becomes crunchy.
  9. Once cool, break the mix into pieces and store in an airtight container.

  • For the best sweet and salty balance, use salted pretzels in your mix.
  • You can substitute pecans with peanuts or other nuts you prefer.
  • If you skip the chocolate chips, you can add 1 cup of dry roasted peanuts for extra crunch.
