15 ounces whole milk ricotta cheese, drained if watery
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon fine sea salt
1/4 teaspoon black pepper
1/4 cup hot honey, plus more for drizzling
1/4 cup chopped walnuts, toasted
1 teaspoon fresh thyme leaves
Instructions
Place the drained ricotta cheese, olive oil, lemon juice, sea salt, and black pepper into the bowl of a food processor.
Process the mixture for 2 to 3 minutes, stopping once or twice to scrape down the sides, until the ricotta is completely smooth and airy. You want a texture like thick frosting.
Transfer the whipped ricotta to a shallow serving bowl. Use the back of a spoon to create a slight well or swirl on the surface.
Drizzle the 1/4 cup of hot honey evenly over the top of the dip.
Sprinkle the toasted walnuts and fresh thyme leaves over the honey.
Serve immediately with crostini, pita chips, or fresh vegetable sticks for dipping.
Notes
If you do not have a food processor, you can use a stand mixer with the whisk attachment or a hand mixer. Beat the ingredients on medium-high speed until light and fluffy, about 4 to 5 minutes.
To toast walnuts, spread them on a dry skillet over medium heat. Cook for 3 to 5 minutes, stirring often, until fragrant. Watch closely to prevent burning.
If you want more heat in your dip, add 1/4 teaspoon of red pepper flakes to the ricotta mixture before whipping.
