2 medium zucchini
1 large egg, lightly beaten
1/2 cup grated Parmesan cheese
1/4 cup almond flour (for low-carb/keto base)
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder

1/2 cup low-sugar pizza sauce or marinara
1/2 cup shredded mozzarella cheese

Instructions
Preheat your oven to 400°F (200°C). If using an air fryer, preheat to 375°F (190°C). Line a baking sheet with parchment paper.
Wash the zucchini. Slice the zucchini into rounds about 1/4 to 1/3 inch thick. You want sturdy bases for your toppings.
Place the zucchini slices on a layer of paper towels. Sprinkle them lightly with salt and let them sit for 10 minutes. This draws out excess water.
Use more paper towels to firmly press down on the zucchini slices to remove as much moisture as possible. This step is key for crispy bites.
In a medium bowl, combine the beaten egg, Parmesan cheese, almond flour, oregano, garlic powder, salt, and pepper. Mix well.
Add the pressed zucchini slices to the bowl and gently toss until each slice is lightly coated with the mixture.
Arrange the coated zucchini slices in a single layer on the prepared baking sheet or in the air fryer basket.
Bake for 12-15 minutes in the oven, or air fry for 8-10 minutes, until the edges start to look golden brown.
Remove the bases from the oven or air fryer. Top each zucchini slice with about 1/2 teaspoon of pizza sauce, a sprinkle of mozzarella cheese, and any desired toppings like pepperoni.
Return the bites to the oven or air fryer. Bake or air fry for another 3-5 minutes, until the cheese is melted and bubbly.
Remove from the heat and let them cool slightly before serving.
Notes
Squeezing the water out of the zucchini is the most important step for achieving a crispy base. Do not skip this.
For an Air Fryer Zucchini Pizza variation, cook in batches to avoid overcrowding the basket, which causes steaming instead of crisping.
If you are not following a low-carb diet, you can substitute the almond flour with 1/4 cup of regular breadcrumbs for the base mixture.
