Make this crowd-pleasing, cheesy baked garlic bread dip using simple ingredients. It combines roasted garlic flavor with cream cheese and mozzarella for a warm, savory spread perfect for crusty bread.

  • 1 head garlic
  • 1 tablespoon olive oil
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 baguette, sliced for serving

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8-inch oven-safe skillet or small baking dish.
  2. Roast the garlic: Slice about 1/4 inch off the top of the garlic head to expose the cloves. Drizzle with 1 tablespoon of olive oil. Wrap the head tightly in aluminum foil. Bake for 30 to 40 minutes until the cloves are soft and golden brown. Let cool slightly.
  3. Squeeze the roasted garlic pulp out of the skins into a medium bowl. Mash the cloves with a fork until smooth.
  4. Add the softened cream cheese, sour cream, Parmesan cheese, parsley, Italian seasoning, salt, and pepper to the mashed garlic. Mix well until everything is fully combined and smooth.
  5. Stir in 1/2 cup of the mozzarella cheese. Spread the mixture evenly into your prepared baking dish.
  6. Top the dip with the remaining 1/2 cup of mozzarella cheese.
  7. Bake for 15 to 20 minutes, or until the dip is hot throughout and the cheese on top is melted and lightly browned.
  8. Let the dip rest for 5 minutes before serving warm with sliced baguette or crackers.

  • For extra flavor, use roasted shallots along with the garlic.
  • You can prepare the dip mixture up to one day ahead and store it covered in the refrigerator before baking.
