  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan or a standard loaf pan.
  2. In a medium bowl, whisk together the eggs until they are slightly frothy.
  3. Pour the entire can of sweetened condensed milk into the bowl with the eggs. Whisk until the mixture is smooth and fully combined.
  4. In a separate small bowl, whisk together the flour and baking powder. This step prevents clumps.
  5. Gradually add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few small lumps are fine. Overmixing develops gluten and makes the cake tough.
  6. Pour the batter into your prepared pan and spread it evenly.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. For a loaf pan, baking time may extend to 40 minutes.
  8. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For a richer flavor, you can substitute 1/4 cup of the flour with almond flour.
  • This cake keeps well stored in an airtight container at room temperature for up to three days.
  • If you want a slight tang, add 1 teaspoon of lemon zest to the batter before baking.
